Coconut or cow's milk?

Coconut milk can be a delicious substitute for cow's milk. Coconut milk is found in the white flesh of fully ripe brown coconuts. Dairy cream, coconut milk has a thick consistency and rich texture.
Often people mistake coconut milk for coconut water. These two fluids are very different. In fact, coconut water comes from less ripe green coconuts.
Coconut milk:

1. Strengthening bones.
Coconut milk is an important source of both calcium and vitamin D. Calcium and vitamin D are one of the strength duos for strengthening bones, as together they strengthen bone density and structure. The phosphorus and manganese content also contributes to bone metabolism.
2. Cardiovascular health.
Consuming coconut milk, which is a source of saturated fat, lowers LDL, or "bad" cholesterol, while improving HDL, or "good" cholesterol. Iron, a mineral responsible for oxygenating red blood cells, helps to strengthen the cardiovascular system. The copper content in coconut milk increases the absorption of iron and helps increase the formation of red blood cells.
3. Increased immunity.
Coconut milk contains lauric acid, a type of saturated fat found in some vegetable fats. Lauric acid is often extracted from coconut to produce monolaurin, an antimicrobial agent used to treat viral infections, including influenza (SARS).
4. Weight loss.
The type of saturated fat in coconut milk is medium chain triglyceride (MCT). MCT oils, compared to long chain triglycerides (LCT), are heralded for bypassing typical fat digestion. This atypical route of digestion suggests MCTs do not accumulate in fat cells and may contribute to weight loss.
